5 Healthy Meals For Busy Boss Babes

One thing all women (working or not!) can agree on - there is not enough time in the day! If you run your own business or work inside or outside the home, making nutritious meals can be tedious, and time consuming. Meal prepping can be a great way to combat that, but some people (like myself) struggle with meal planning and prefer to cook meals for that day. So I put together the top 5 healthy meals for busy boss babes that you can make when you're in a hurry or absolutely exhausted!

1. Avocado Boats

I have only tried the Mexican style of these so far but I can absolutely vouch that these are delicious! Half of an avocado is enough for a light lunch, or have both if you're looking for a fuller meal. The great thing about these is that you can really mix it up to your tastes!

2. Sheet Pan Pablano Chicken Fajitas

One pot and one pan recipes have taken the world by storm lately, and I am all here for it! Fajitas can be personalised to make it your own for fussy eaters, and if you have any little one's in your house they can 'help' by putting together their own fajita.

3. Crock-Pot Stuffed Peppers (Capsicum)

Slow cookers are renowned for their hearty and mouth watering carby meals, but you can certainly utilise your slow cooker to make healthy meals! These crock pot stuffed peppers are so easy and delicious (plus Instagram-worthy!)

4. Bake Me Snacks

Ok, so technically these are a kids range of snacks, but I seriously cannot stop raving about these bad boys. With a lactose intolerant kiddo, it can be seriously hard to find easy, fast and on the go snacks for her. With these, you can get such a huge range of bake at home snacks that are convenient, affordable and EASY. The teenager and the toddler gave these Banana, Date & Coconut Bars the tick of approval, so I'm going to take that as a big win.

5. Texas Size Muffins

Bec Taylor, featured in our second issue of Girl Boss Mag, knows all about making easy, healthy and affordable meals for families. She offered us her recipe on Texas Size Muffins from her Cut The Chemicals Cookbook here!
